Mainly, it tastes not burned the way pasteurized honey tastes. Sure it was heated, but as they say, only enough to get it in the jar and not enough to kill all the natural enzymes and pollen. It's light in color the way you expect of clover honey. It's better than regular processed honey. I don't see how processed honey is better than granulated sugar in terms of health benefits.
