Review: High Quality & Sharp - I suck at cooking, but I like wasting my money on fancy stuff. I only cut fruits n veggies. I am coming from the "Lenox L-22514 7-Piece Cutlery Set", which was by no means bad. With a whetstone I was able to get them basically arm hair shaving sharp. I just felt like replacing them with a "real" set of knives, not made in China. I love the look of the layered, hammered steel. It looks even better in person. These are extremely sharp. Probably a hair sharper than I was able to get my last set. I think they are sharpened at a steeper angle. One thing that surprised me is the overall thinness of them. The spines on Lenox knives are 2.75mm wide; these are 1.95mm. I'm not sure if this is generally seen as a pro or a con. I'm sure it makes cutting easier, but the knife is less sturdy (?). Maybe the higher quality steel makes up for it. I guess you shouldn't be using a knife like an axe anyway. Kiritsuke: Looks awesome. I suck with it, probably won't use it much unless I'm cutting something huge. Easy to get the tip stuck in the board. From what I understand this is an "expert's" knife. No knocks on this kinfe, I should probably just get some skills. But did I mention it looks awesome? Santoku: Awesome go-to knife. I will not be buying a chef's knife so this will be my go-to general purpose knife. Nakiri: Never had a knife like this. As I mentioned I pretty much just cut up veggies.
