I'm building a level flagstone firepit on a slight slope. Would this work to divert water around the area to avoid erosion?

The terrace board is designed to keep small rocks or mulch in a particular area. I do not believe it would be effective in diverting water away from your patio. Suggest you look into drain tile to collect water around your patio and divert the water away. Drain tile is a corrugated pipe with Julie’s on one side to collect water and the pipe drains the water away from desired area. Good luck,

Is it safe for veggie gardens?

I don’t see why it wouldn’t be. It is a hard plastic. I would feel safe using it in my vegetable garden.
