Is this screen acoustically transparent? I.e can I place a centre speaker behind the screen?

There is nothing to state that it is. I am not quite sure what acoustically transparent material looks like in terms of projector screens but this screen is a rubbery/latex type material... Not accoustically transparent. Not at this price.

Hi. I have one of these - it's great. Can you get replacement screen material and if so, do you do negative gain versions?

can this screen be hung up in a log cabin

Don't see why not. You just need to be able to screw 2 or 4 screws in. Providing you have a log wall capable of hanging a reasonably heavy picture then this should be fine.
