For best flavor it is suggested to use within a year. **Q: Country of origin?** A: Miso paste was originally from Xhina and then later on introduced into the Japanese food culture **Q: Is this pasteurized or does it have the beneficial bacteria?** A: It is fermented soybeans and has all the health benefits of any fermented product. This is a large amount but excess can be frozen. Its good by the way. The darker the color the richer the flavor. This is mild , red is stronger and is what is used in miso soup in restaurants. Hope this helps you. **Q: I just ordered but there is no expiration date.. can someone advise what the expiration on this product is?** A: I read somewhere that because it is fermented & has a high salt content it doesn't go bad. This is much better than last batch. It came very wet, but weight / $ was Incredible.It's quite low salt which is a benifit. You can add LOTS per 1000 mg sodium and ADD salt to taste for dish.I use to in most cases I might use chicken broth. Unami ,flavored rice, curry, brothIt's terribly cheap and as I said unami can be appied to anything in smaller qty.I will try to find an expert - this isn't the perfect one for me but can't explain why4 of 5 Stars. for my taste needs5 of 5 price and quality ### ⭐⭐⭐⭐⭐ Red miso is my favorite *by M***N on November 17, 2022* This is my second purchase of this red miso paste and I just love it.
