Then, I drained off each egg’s thin fluid using a fine mesh sieve, and plopped the egg into a ramekin. It’s important to do seive, because the fluid is superfluous and WILL impact your results. I seasoned and swirled each egg around to distribute the spices, and dropped it into a pan cup. Once the cups were filled and my pan’s water was solidly simmering, I inserted the insert, poached for 5 minutes under the lid, and checked. Several eggs weren’t as done as others, and it was because I hadn’t seived enough of their fluid off. So I let the entire rack poach for another minute. My eggs turned out almost great, but the well-drained eggs were more done than the watery ones. Next time, I’ll use a less-fine mesh to drain every egg better and equally beforehand Cleanup was trivial, and I hand-washed every part with a soft scrubber even though I have a great dishwasher. The first was for me. The second was for my daughter-in-law, and the third was for my sister. ALL of us LOVE this pan. I have watched videos showing how easy it is to make poached eggs for decades and tried many times, only to end up with a lot of wasted egg white and watery eggs. Used properly, this pan produces perfectly done poached eggs each and every time. Follow the directions. The little spatula is essential, works well, is durable, and keeps excess steam out of your finished eggs. The nonstick cups work well, but even better if you butter them slightly.
