how do you keep the head up so you can install a new nozzle on a 5000 series sprinkler head

I personally use channel locks to hold the head up and keep it from retracting back into the body. Other than that you basically have no choice but to hold it with one hand as you push the nozzle in with your other.

What is the difference between the regular and the “Limited edition” option?

There is no difference the “standard” edition is the only one Rainbord manufacturers.
