Since the kit in question comes with a 3-way switch, and if you are here in the States, I would go with a 3-way bulb rated at 30w/70w/100w. I would not recommend a 50w/200w/250w as that could produce a lot of heat very close to some lamp shades and would be a potential for fire (not to mention just unnecessary). Also, this kit comes with 18 gauge stranded wire which is more appropriate for low voltage applications and I recommend use on applications with 10 amp draw maximum (the lamps mentioned above should draw no more than 1 to 2 amps as a rule). The listed power rating of 75 watts is what would be considered acceptable usage: a medium power (mid-range) bulb, under continuous use, when installed in their components, for safety and warranty purposes.
