This thermometer is not to be used in an oven when cooking food.

does the thermometer need to be immersed in something or will it read the air temperature also?

It does both, it will have a base starting point of the air around the thermometer until used. Then to be immersed to get a reading on the item your reading. However if what your reading does not submerge the knot indentation it will not give you a accurate reading.

This product contains no mercury

What is the blue one is?

The blue sleeve is to protect the thermometer when not in use. It also functions as a holder for the thermometer when measuring temperatures over something hot. And lastly, the patented built-in wrench is used when recalibrating the thermometer.
