Easy to melt if you want to pop it in the microwave, does not seize unless you blast it (which most would not). Made caramelized white chocolate oven and microwave method and both results were perfection. 250g in microwave for 1 mins, stir than continuously 15 seconds stirring in between. I was worried bc it started to stiffen but I kept going. Once it turned that beautiful caramel color it was beautiful and glossy. 100% recommend using this product to make caramelized white chocolate.
