One we used as a flat warmer for a large pan of fried chicken, the other we used with the trays in for meatballs & sauce for meatball sandwiches. The temperature is adjustable from warm to hot. The lids fit well with a slot for the utensils if you want to keep the spoon in the food. There's a metal piece to put in the back of the trays that will hold the lids while you are serving food. I didn't use them but did try them out before the party. They work, I just didn't need them. They cleaned easily, and store perfectly in the box w/ molded Styrofoam that keeps all the pieces from rattling around. We used them again for a large family Christmas party this past weekend. This time we only needed them for the flat heated units for 2 large trays of fried chicken. The buffet servers were a hit & everyone wanted to know where we bought them!
