Is this any good for a crack in a white granite compositekitchen sink??

I would have thought so. If you over-fill the crack, you can sand it down when it is dry. I repaired a ceramic basin and was very pleased with the results.

Would i be able to use this on a breyer horse model to make a mane? (they are made of a plastic) and do i just mix the two parts together?

Hi, Its unlikely it would make a permanent bond. As the model is made from plastic you would likely find it would separate if handled to much, dropped etc.

Would this work for making custom Funko figures?

It might be a little heavy on vinyl figure bases, it would be like putting porcelain/china on top of it. Maybe try some kind of thermoplastic instead - lightweight and will mold well.

Would this stick to wood to make designs?

I can see no reason why it should not stick to wood, and indeed Milliput's own website says it does. I have certainly stuck it to other porous substrates.
