No. Instant does not require heat to thicken. The product will thicken once the liquid is added. Cook Type, on the other hand, must be heated.

Is this made from organic corn? Organic corn is the only kind that is non-gmo, I believe

I don’t know. This is the only kind recommended for canning, that’s what I bought it for.
