Would this work adhering a rubber mat to a shower floor?

Yes but be very careful where you spray it. It dries very quickly and sticks really well don’t get it on your hands.

can i use this to bond two pieces of upholstery or memory foam together?

I used it to glue the installation of headliner in my truck. It worked great. I'm only guessing but I'd say that it would work.

Can this be used for attaching a 15"x30" wall tile?

If you are talking about a ceramic or glass tile, no.
