Product Description Doves farm organic wholemeal emmer flour is milled from whole emmer wheat grains, that are grown amongst the rolling hillside of the Wiltshire/Berkshire border. Believed to be one of the first grains cultivated by man, alongside Einkorn, this wheat variety is almost purple in colour when viewed alongside other grains. With a deep earthy flavour, this flour is creamy in texture and produces delicious loaves of bread, but can also be used in place of your usual white or wholemeal plain flour, with raising agents added, for cake and biscuit baking. **Q: Do I need to adjust the water when this flour is used as alternative to strong white(or wholemeal) bread flour**
A: I use this flour for baking cakes and biscuits following recipes and find no more water is required. Not yet tried it with bread.

Very interesting flour, apparently many people with gluten problems can tolerate it. Maybe because of the extra fibre? Lovely flavour also, made delicious shortbread with it.
