This strain of live bacteria is one of the main 'friendly' bacterias and is found in many dairy products, such as yoghurt. The bacteria ferment at an optimal pH of 5.0 and develop best at temperatures of 37°c. The bacteria was given its name due to its role in breaking down sugar in milk (lactose) into lactic .
