Thanks.** A: Mushroom House Dried Mushrooms are much cleaner than any other dried mushroom I've used, but before cooking with any type of dried mushroom, I reconstitute/rehydrate them in hot water, then strain (and keep) the soaking liquid - as per the instructions in Bittman's "How To Cook Everything". I add it to everything I eat every day. ### ⭐⭐⭐⭐ Good For Gravy, Not For Presentation *by L***H on 9 February 2017* These come flexible in the bag. To me this means not fully dried. But an hour in the oven at a low temp made them dry enough to snap instead of bend. The fully dried mushrooms rehydrate very well, but the flexible ones did not do so well. There is a good amount of Wood Ear mushrooms that do grow in the woods, but not here in the Pacific NorthWest. These are marked as grown in China. Even though these were not fully dried on receipt, there was no sign or scent of mold, or any other disagreeable odor of any kind. For use in cooking, after I dried them thoroughly, I used a mortar and pestle and broke them into much smaller pieces. I do this because I want the flavor of the mushrooms, not necessarily the shape.
