How spicy hot is this on a scale of 1 to 10?

I have been consuming Tom Yum pastes for decades and this brand is by far the worst. As far as the heat factor, its not considerably spicy hot, just plain awful.

Should this be refrigerated after opening?

Yep! (PS This comes in one large pouch package that can be a little tricky to get back into the can and into the fridge without making a mess)

How much soup base does this make, volume, not "servings"??

I don't know for sure, but I would imagine quite a lot. In a good-sized pot of soup, at least 3 to 4 quarts... I used only a few tablespoons of it. It is very spicy.

I guess this really applies to individual taste buds but I didnt really like this paste mixed with just water and heated up. In my opinion the balance was wrong so I read some reviews and added Tamirind Sauce it helped. After that I purchased some coconut milk powder and mixed the paste with that and the taste improved loads. You can add prawns but for a luchtime soup I added spinach cubes and you get a very delicious soup. You might love it just mixed with water it is very spicy that way with the coconut powder it balances the flavour.
