Yes, it can be frozen. I bought the 5 lb. (2 pieces) because it offered the most cost-effective way to get it. This, of course meant either eating a whole lot of cheese over a fairly short time, or preserving much of it in smaller, more practical size pieces - thus freezing. I have a seal-a-meal vacuum sealer and used that method. After a few weeks in the freezer, I thawed one of the frozen pieces and found it totally satisfactory. I don't know how well it would keep if frozen in a regular freezer or zip-loc bag, but I would suspect that it would tend to dry out and maybe oxidize. I've found that the seal-a-meal system to work very well in preserving the quality of stored freezer foods - sometimes after YEARS of storage in a forgotten corner of the freezer. The only exception to this that I have experienced is with irregularly-shaped foods which sometimes leave small pockets of air trapped in crannies which will tend to get oxidized and off-flavored and even in these situations, only the parts next to the air pockets are affected and can be cut out, leaving the rest OK.
