Since the creation of the steel mill, white flour has over-fed the American public. Grain is supposed to give you calories, but also feed your microbiome (gut.) When it is too finely ground, you absorb FAR more calories. We switched to spelt and love the results of a cleaner gut, bread that is nutritious and contains all the essential amino acids, unlike the other flours that are available. I would not normally buy food from an online source. But this is excellent quality. It’s obviously been well shifted or sorted so that you were getting a very good product.
