A: Hi John, Yes we do sell a saya cover that would fit the Tojiro Sujihiki Slicer 270mm that you have depicted.

**Q: What's 10.5 inches? The entire knife? Handle included? Or just the blade alone?**
A: The blade is 10.5 inches, not including the handle.

**Q: Does this blade have any flexibility in it for fish fabrication like filleting or is it purely for sashimi and other asain cuts after fabrication?**
A: It is not a filet knife. It has more flexibility than a chef or Santouko bu certainly far less than a filet knife.

**Q: Is this carbon steel? Does it require a ceramic rod or are regular rods preferred?**
A: This knife is Stainless not Carbon Steel.  Most Japanese knives like this are too hard and therefore more brittle for European honing rods.  It is better to use a ceramic rod or a leather strop to maintain the edge between sharpenings with a whetstone.

As an affordable entry level into Japanese knives, this knife rocks. Razor sharp out off the box, great edge retention and easy to maintain. If you've been hesitant to spend a little extra for a good knife this is a good way to see what the difference can be for a few dollars more. You won't regret it!
