These are the handle-opening helical bi-directional springs for the 255 mm poultry shears #42914-001. They are stainless, but if stainless is abraded, as these are in use, it will rust once the highly polished finish has been breached. A small weak point in an otherwise excellent tool. I use mine at least twice daily, cutting chicken for my dog's meals. They hold up amazingly well, especially if Henckels will continue to supply the springs. **Q: do these come apart for cleaning?** A: No, they do not. I have disassembled them to see if I could repair the wear in the joint, but it is quite a job, and, no, there's no reasonable way to fix the wear. However, that was after several years of heavy daily use. They are very good long-lasting shears, but everything wears out eventually. The cutting edges are very sharp and last even longer than the joint. They are still in good shape. The weak point in short term is the spring which opens the handles. It can start to rust if it's not thoroughly dried after each use. Henckels supplied me with several springs at no cost when I called about it. They're easy to replace. Within a couple of years, however, the blades, through normal use began to loosen at the axis. This causes the shears to no longer cut the chicken skin. It still gets through the joints fine. One more annoyance is that as the shears close (as in normal cutting motion) the safety lock often engages. So I have to unlock the shears so I can open them up again to make another cut.What bugs me the most is that there is no way to tighten the shears to make them cut properly. There appeared to be a screw at the place where the blades are attached but it cannot be tightened.
