What color is the expanded product?

It is a light beige color. I am using it floatation and painted the exposed surface blue (just because I had blue spray paint and thought it might protect the surface, probably not needed though)

What can you use to break this down? I have some spillover i want to remove. Acetone?

Yes, that's what I used and it worked fine.

As it expands, does it exert a lot of force on mold it is in?

By my experience it does not. But you will need couple of vents to release pressure and overflow. It does heat up and you can feel it.
